Make a large cow head, and a lasso, let your children try to rope it.
If your children can't rope it or it is hard. Try using a hula-hoop with a rope tied to it If you can find an old saddle bring it in your classroom and let your children play with it. Cut out paper people and clothes and let your children dress their cowboy/cowgirl.
